Cucumber soup with raw ham

Directions

  1. Wash the cucumber and pat dry with kitchen paper. Cut off 12 thin slices.
  2. Peel the rest of the cucumber and the second cucumber as well, halve in length and scrape out the seeds.
  3. Cut the cucumbers into cubes. Chop the shallots. Heat the butter in a pan and fry the shallots for about 2 minutes. Fry the cucumber cubes briefly.
  4. Crumble the bouillon tablet above it. Pour the water into the pan, bring to a boil and cook the cucumber gently in about 10 minutes.
  5. In the meantime, cut the ham into strips. Cut the coriander nicely. Purée the soup with a hand blender or in a food processor and stir in the crème fraîche.
  6. Heat the soup again. Season with salt and pepper. Divide the soup over the plates. Spread slices of cucumber, ham strips and coriander over them.
