Coconut granita with lime and mint

Place 1 lime under hot water and peel it thinly. Squeeze out the 4 limes.

Heat the sugar with 500 ml water until the sugar is dissolved. Add the lime zest and the lime juice and allow to cool slightly. Remove the lime zest.

Add the coconut milk and mint leaves (except for the garnish) and puree everything with a hand blender. Pour the mixture into a low dish and put in the freezer.

Stir after about 2 hours of freezing with a fork into a loose ice cream. Put the granita in the freezer for about 1 hour.

Serve in glasses and garnish with some mint leaves.
