Boil the rice with the water, the coconut milk and a pinch of salt while stirring on a low setting in about 20 minutes.

Pour the rice on a flat dish and let cool completely outside of the refrigerator.

In the meantime, heat the lime juice with the sugar until it has dissolved and leave to syrup in a few minutes. Allow to cool.

Roast the coconut in a dry frying pan golden yellow and scoop on a plate.

Use a damp cool hand to roll small balls of rice and roll them through the coconut.

Put 3 balls per person in a bowl and drop some lime syrup along.
