Directions

  1. Cut the tomatoes into 6 parts each.
  2. Cut the onions into quarters and slice them.
  3. Finely chop the garlic.
  4. Put the olive oil in a pan and fry the onion and garlic.
  5. Then add the tomato and tomato puree and stir well.
  6. Let this mixture gently simmer for 15 minutes covered; do not stir anymore.
  7. Wet a tea towel, wring it out and coat a colander or sieve with it.
  8. Put the compote in and let the moisture run out.
  9. Keep the moisture in the cod.
  10. Season the tomato compote with salt and pepper.
  11. Remove the leaves from the basil.
  12. Cut off the crusts from the bread and cut the sandwiches into blocks.
  13. Put them in a food processor with the basil, but keep a leaf separate for each person.
  14. Turn this into the crumb for 30 seconds in the food processor.
  15. Add salt and pepper to taste.
  16. Preheat the oven to 180 degrees.
  17. Grease an oven dish with the rest of the olive oil.
  18. Salt the cod on one side and spread the other side with mustard.
  19. Place the cod on the salted side in the dish.
  20. Divide the compote over the pieces of cod and sprinkle with the basil crumbs.
  21. Put the cod in the oven for 8 minutes.
  22. Boil the tomato juice and stir the butter through the liquid into a nice sauce.
  23. Remove the cod from the oven.
  24. Put the fish on the plates, add a leaf of basil and scoop the sauce around it.
  25. Tasty with pasta sticks.
