Ingredients
- 1 tablespoon balsamic vinegar
- 2 tablespoon peanut oil
- 2 tablespoon sunflower oil
- 500 gram tilapia fillet
- 1 tablespoon butter
- 1 tablespoon peanut oil
- 1 tablespoon sunflower oil
- 250 gram shallot peeled, in four
- 1 Red onion shredded
- 1 clove garlic shredded
- 1 tablespoon Brown sugar
- 1 tablespoon honey
- 50 milliliters port wine

Start with the shallot compote. Heat the butter with the oil and fry the shallots, red onion and garlic without letting it color.

Add the other ingredients for the compote and gently simmer for 15-20 minutes without the lid so that the moisture evaporates slightly. Stir occasionally. Allow the compote to cool slightly.

For the tilapia mix salt, pepper, balsamic vinegar and oil. Rub the fish fillets with this and leave to withdraw.

Heat a grill pan and grill the fish on both sides for 2-3 minutes. Serve the shallot compote with the fish.
