Heat the butter in a large frying pan with non-stick coating and fry the bacon and vegetables for about 5 minutes.

In a bowl, beat the eggs with the cream. Cut the chives finely and beat through the egg mixture. Season with pepper and salt.

Pour the egg mixture with the bacon and vegetables in the pan. Allow the egg to solidify in about 15 minutes on medium heat.

Let the omelet slide out of the pan onto a bowl and cut into quarters.
