Heat the oil and fry the onion for about 4 minutes. Add the garlic, ginger and curry and fry for 1 minute on a low setting.

Rinse the rice in cold water and add together with the stock. Bring to the boil while stirring and turn down the heat source. Boil the rice covered according to the instructions on the package.

Meanwhile, boil the eggs hard in about 5 minutes. Let them scare under cold water and peel them.

Pick the mackerel from the bones and divide into pieces. Spoon the fish together with the lemon zest, juice and coriander through the rice. Halve the eggs and serve them at the kedgeree.
