Directions

  1. Heat the oil and fry the onion for about 4 minutes. Add the garlic, ginger and curry and fry for 1 minute on a low setting.

  4. Pick the mackerel from the bones and divide into pieces. Spoon the fish together with the lemon zest, juice and coriander through the rice. Halve the eggs and serve them at the kedgeree.
