Preheat the oven to 150ºC. Heat 2 tablespoons of oil in a frying pan and fry the peppercorns, red onion and chilli powder 3-4 minutes.

Spoon the tomato cubes and 1 tablespoon of coriander through it.

Remove this mixture from the pan and add the rest of the oil to the shortening. Put a tortilla wrap in the pan, divide 2 tablespoons of grated cheese with 1/4 of the pepper mixture and divide 2 tablespoons of cheese on top. Cover with a second tortilla and cook for about 2 minutes until the bottom is golden brown.

Turn the quesadilla over and fry for a while. Keep warm in the oven and bake 3 quesadillas.

Mix the sour cream with the paprika powder.

Cut the quesadillas into points and serve with the sour cream. Sprinkle with the rest of the coriander.
