Dab the fish dry and sprinkle with salt. Mix the garlic with the lime juice and pour over the fish. Marinate about 20 minutes. Meanwhile, cook the rice.

Heat the oil and fry the onion. Add the fish with the marinade and simmer for about 2 minutes.

Pour the coconut milk with 200 ml of water and add the peppers, tomatoes, spring onions and 1 tablespoon of coriander. Slowly simmer for about 5 minutes.

In the meantime, heat the beans, drain them and scoop them through the rice.

Sprinkle the stew with the rest of the coriander and serve with the bean rice.
