Cod with asparagus and rucola salsa
A tasty recipe. The main course contains the following ingredients: fish, green asparagus, cod fillet, extra virgin olive oil, dry white wine, arugula (minced meat) and black olives (coarsely chopped).

Preheat the oven to 175 ° C. Cut a 2 cm piece from the bottom of the asparagus. Peel the bottom of the asparagus if they feel somewhat dry or woody. Halve whole fat asparagus once in length. Cook the asparagus for 5 minutes in plenty of water with salt. Drain them in a colander.

Place the asparagus side by side in a large oven dish. Cut the cod fillet into 1/2 cm thick slices. Place the slices on the asparagus roof tiles. Sprinkle the fish with salt and pepper and drizzle with 2 tbsp oil. Pour the wine into the dish. Place the dish on the grid in the middle of the oven and let the fish cook in approx. 12 min.

Meanwhile stir together the arugula, the olives and the remaining 2 tbsp oil. Add salt and pepper to taste.

Put a portion of the rucola salsa on the fish. Tasty with boiled new potatoes.
