Heat a dash of olive oil in a frying pan and fry the onion and garlic for 2-3 minutes. Scoop the pepper through and cook for 2 minutes. Add the tomatoes and heat gently.

Dab the cod dry and sprinkle with salt and pepper. Place the fish in the sauce and cover for 5 minutes at a low setting.

Meanwhile, cook the garden peas for 4 minutes. Drain and puree the peas with salt, pepper, half of the parsley and a dash of olive oil to a thick puree.

Divide the garden pea puree over 4 warm plates. Serve the cod with the pepper sauce.
