Cold Potato Leek Soup
A tasty Dutch recipe. The vegetarian starter contains the following ingredients: olive oil, leeks (in thin rings), potatoes (crumbly, peeled and diced), vegetable stock tablets, whipped cream (250 ml), roasted pepper ((465 g) and cut into strips).

Heat the oil in a soup pan and fry the leek for 3 minutes.

Add the potato cubes to the leek and let it cook for 2 minutes.

Add 1 1/2 liters of water and vegetable stock tablets.

Bring to boil.

Let it boil for 12 minutes.

Puree with a hand blender.

Pour through a sieve into a bowl.

Return to the pan, season with salt and pepper.

Allow to cool to room temperature.

Leave to cool in the refrigerator.

Stir in the cream before serving.

Divide over 4 glasses.

Garnish with the strips of paprika..
