Cold Potato Leek Soup


A tasty Dutch recipe. The vegetarian starter contains the following ingredients: olive oil, leeks (in thin rings), potatoes (crumbly, peeled and diced), vegetable stock tablets, whipped cream (250 ml), roasted pepper ((465 g) and cut into strips).

Directions

  1. Heat the oil in a soup pan and fry the leek for 3 minutes.
  2. Add the potato cubes to the leek and let it cook for 2 minutes.
  3. Add 1 1/2 liters of water and vegetable stock tablets.
  4. Bring to boil.
  5. Let it boil for 12 minutes.
  6. Puree with a hand blender.
  7. Pour through a sieve into a bowl.
  8. Return to the pan, season with salt and pepper.
  9. Allow to cool to room temperature.
  10. Leave to cool in the refrigerator.
  11. Stir in the cream before serving.
  12. Divide over 4 glasses.
  13. Garnish with the strips of paprika..
