Sprinkle the flour, mixed with paprika, into a deep plate.

Beat the eggs with 2 tablespoons of water in a second deep plate.

Sprinkle the breadcrumbs on a third plate.

Roll the cheese strips first through the flour, then through the egg and then through the breadcrumbs. Place the cheese strips next to each other on a plate and put them in the freezer for about 15 minutes so that the paneer layer adheres well.

Mix the lettuce with the paprika, fennel, apple and dressing.

Heat the butter in a frying pan with non-stick coating and fry the cheese sticks around brown in 2-3 minutes. Do not bake the sticks too long, then the cheese runs out of the breading layer.

Serve the cheese sticks on the salad and serve coarse brown bread with walnut tapenade.
