Country pub soup with chicken


A tasty Dutch recipe. The starter contains the following ingredients: poultry, butter, chicken fillet ((free-range), in pieces), onion (chopped), potatoes (solid, peeled and diced), chicken stocklets, leeks, dried thyme, coarse mustard and whipped cream (a 500 ml).

Directions

  1. Heat the butter in a soup pot.
  2. Fry the chicken for 5 min.
  3. Remove from the pan and keep separate.
  4. Fry the onion in the same pan for 5 minutes.
  5. Add the potato.
  6. Pour 1 1/2 liter of water into the pan and add the bouillon tablets.
  7. Cut the dark green part and the bottom of the leek.
  8. Halve the leeks in length.
  9. Cut the vegetables into oblique pieces of about 2 cm.
  10. Rinse and add to the soup.
  11. Add the thyme and the mustard and bring the soup to the boil.
  12. Turn the heat down and let it simmer for 30 minutes.
  13. Add the cream and the chicken and cook for another 5 minutes.
  14. Pour some water with it, if the soup is too thick.
  15. Season with salt and pepper and spread over 4 deep plates or bowls..
