Peel and chop the onion. Cut the aubergine into cubes. Fry the mince in a dry frying pan on a low heat. Add the onion and eggplant and cook for 3 minutes.

Stir in the tomato cubes, water and mix for couscous through the minced meat mixture. Cook gently for 10 minutes. Put the couscous in the bowl and add the boiling water.

Let the couscous heat for 6 minutes. Divide the couscous over the plates. Scoop the minced meat mixture and sprinkle the cheese cubes over it.
