Cook the penne al dente and drain.

Meanwhile, bake the bacon cubes in a dry, hot frying pan in a low setting for about 5 minutes. Add the thyme, bay leaf and cream and let it simmer for a few minutes.

Tear or cut the endive leaf coarse for the salad. Spoon the endive in a bowl with the apple, raisins, onion, cheese and dressing.

Drain the pasta, scoop through the sauce and serve with the endive salad.
