Creamy cauliflower soup with almonds
A tasty recipe. The vegetarian starter contains the following ingredients: onion (chopped), garlic (finely chopped), olive oil, ready-to-cook cauliflower florets, vegetable stock tablet, almond shavings (a 55 g), crème fraîche and lemon juice.

Fry the onion and garlic in the oil in a soup pot for about 1 minute.

Add the cauliflower florets and fry them for 1 minute while you are in the boat.

Crumble the bouillon tablets above and pour in 750 ml of hot water.

Let the soup come to a boil.

Lower the heat and simmer for 10 minutes until the cauliflower is tender.

Meanwhile, while stirring, roast the almond shavings golden brown in a dry frying pan over medium heat.

Spoon the almond shavings on a plate.

Purée the soup using a hand blender or food processor.

Mix in the crème fraiche and the lemon juice and add salt and pepper to taste.

Heat the soup until it is hot.

Divide the soup over four bowls or deep plates and sprinkle with the almond shavings..
