Crispy oven chicken
Stuffed chicken from the oven with mashed potatoes and zucchini with pesto.

Preheat the oven to 200 ºC.

Cut the mozzarella into slices. Cut the chicken fillets open like a bag, keep the opening small. Fill them with the mozzarella and seal well with cocktail stick (s).

Beat the egg. Sprinkle the oven mix on a plate. Roll the chicken fillet through the egg and then through the oven mix.

Place the chicken breast on a baking tray covered with parchment paper and bake in the preheated oven for approx. 20 minutes until done.

Heat the mashed potatoes according to the instructions on the package.

Meanwhile, cut the zucchini into cubes. Heat the oil in a frying pan and fry the zucchini cubes in 4 min. Until al dente.

Spoon the zucchini in a bowl with the pesto and pepper and allow to cool slightly.

Put the puree and the lukewarm courgette salad on plates. Remove the picks, cut the chicken fillet into thin slices and spread over the plates.
