Dab the fish dry, sprinkle with salt and drizzle with the juice of 1 lemon.

Place the fillets side by side on baking paper. Put basil leaves on top (keep some behind to garnish) and brush generously with butter.

Divide the filo pastry over it and press it over the fish fillets.

Brush with the rest of the butter and let it harden a bit. This can be done in advance, if stored refrigerated.

Cut the dough on the edges of the fish so that only the top of the fish is covered with dough.

Heat the oil and fry the dough side of the fish in about 2 minutes until golden brown.

Turn around and bake on a low setting the other side for 2-3 minutes.

Cut the remaining lemon into thin slices. Garnish the fish with basil and lemon. Tasty with baked potatoes and green vegetables.
