Croque madame with broccoli soup

Directions

  1. Preheat the oven to 200 ° C. Divide the broccoli into florets and cut the stem into slices.
  2. Melt the butter in a soup pot. Slice the garlic and fry for 1 min.
  3. Add the broccoli, the water and the bouillón tablets and bring to the boil. Let boil for 8 minutes.
  4. Meanwhile, melt the butter in a saucepan with a thick bottom on low heat. Mix the flour through. Leave to cook for 3 minutes.
  5. Add the milk into particles. Add the next shoot only when the previous one has been recorded.
  6. Add the cheese and simmer for 3 minutes on low heat. Season with pepper and salt (bechamel).
  7. Take the pan with broccoli from the heat and puree with the hand blender until smooth.
  8. Season the soup with pepper and salt. Cook gently on low heat.
  9. Place the bread on a baking tray covered with parchment paper. Spread over 4 slices of ham, bechamel sauce and cheese.
  10. Bake for about 5 minutes in the oven until the sauce bubbles and lightly turns.
  11. Meanwhile, melt the remaining butter in two frying pans and fry 4 fried eggs.
  12. Take the croque madame out of the oven. Cover the 4 slices with the unpilled cuts. Put the fried eggs on top and serve with the broccoli soup.
