Directions

  1. Boil the sweet potatoes with the red onion for about 20 minutes.
  2. Drain, crush well and add 3-4 tablespoons of the tomato oil.
  3. Stir the spinach and tomatoes through the sweet potatoes and season with salt and pepper.
  4. Crumble the goat's cheese over the stew, sprinkle the pine nuts over it and serve.
