Heat the olive oil and fry slices of parma ham crispy in the oil. Drain on kitchen paper.

Brush all sandwiches with tomato pesto and top half with cabbage lettuce, thinly sliced red onion and Parma ham.

Cover with the other sandwiches and cut diagonally.
