Cucumber snacks with avocado
Plan of 1 cucumber long ribbons.
Cut the other cucumber into about 8 pieces and hollow them out with a spoon or apple drill.
Halve the avocados and remove the kernel.
Prepare the pulp with lemon juice and season with salt and pepper.
Roast the pine nuts in a dry, hot frying pan.
Mix the onion through 2/3 of the avocado puree.
Place the cucumber ribbons side by side and brush the ribbons with 1 tablespoon of avocado puree.
Roll out rolls and set them upright.
Divide the pine nuts over it.
Mix the rest of the avocado with the cream cheese.
Fill the cucumber containers with this mixture and garnish with strips of tomato and some tufts of garden cress.
