Use a peeler to cut a number of strips of the cucumber shell lengthwise to create a stripe pattern. Cut slices of about 1 cm thick from the cucumber.

Scoop some of the seeds from each cucumber slice with a spoon. Spoon the mackerel mousse in a piping bag and spray the mousse in the cucumber containers. Sprinkle with the rest of the parsley.
