Dutch shrimp soup with sherry


A tasty Dutch recipe. The starter contains the following ingredients: fish, onion, crisp potatoes, butter, tomato paste (70 g), fish stock, dry sherry, Dutch shrimp (a 100 g), crème fraîche (125 ml) and cress.

Directions

  1. Peel and chop onions.
  2. Peel potatoes and cut into cubes of approx.
  3. 1 cm.
  4. Heat in a pan of butter and gently fry onion and potato cubes for about 1 minute.
  5. Mix in tomato puree.
  6. Fill the bouillon tablets on top and add 8 dl of boiling water.
  7. Soup gently for 8-10 minutes until potato is tender.
  8. Fry the pan and stir in sherry, half of shrimps and crème fraîche.
  9. Puree soup.
  10. Put the pan back on fire and heat the soup for a short while.
  11. Make soup in four deep plates and divide the rest of the shrimp.
  12. Garnish with cress.
  13. Tasty with crusty baguette..
