Cucumber-salmon soup with spring onion
If you are a fan of soup, you should try this delicious cucumber salmon soup with spring onions
- 400 milliliters semi skimmed milk
- 200 gram smoked Norwegian salmon in strips
- 1 cucumber peeled and diced
- 2 meat tomato peeled and diced
- 2 spring / forest onion in narrow rings
- 200 milliliters low fat yogurt
- 200 milliliters chicken bouillon from tablet or from jar
- Salt and freshly ground pepper
Bring the milk to the boil with 3/4 of the salmon.
Mash the milk with salmon together with the cucumber and tomato cubes and half of the spring / spring onions.
Pour in the yogurt and the stock and mix well.
Add salt and pepper to taste .
Put the soup for at least 30 minutes and preferably longer in the refrigerator to cool well.
Serve the soup with the rest of the salmon strips and sprinkle the spring / forest onion over it.
