Wash the flower sprouts and pend them dry in the salad spinner. Halve the large copies.

Cut the pomegranate in half. Remove the seeds from the fruit above a bowl by hitting the back with a wooden spoon. Store the sprouting juice. Remove the white pieces.

Clean the avocados and cut them into pieces. Mix with the pomegranate seeds and their juice, the flower sprouts, olive oil, vinegar and season with salt and pepper. Do everything on a nice scale and spread the shrimp over it. Garnish with leaves of fresh mint.
