Heat the olive oil in a soup pan.

Cut the zucchini into cubes.

Squeeze out the garlic cloves and stir in the soup vegetables, zucchini and herbs.

Fry for two minutes on a low heat.

Crumble the bouillón tablets over the vegetables and pour the tomato juice and half a liter of water.

Bring everything to the boil while stirring.

Cut the beef sausages into slices.

Stir in the penne, white beans with liquid and slices of sausage through the soup and bring everything to the boil again.

Boil the soup gently in ten minutes.

Season the soup with the pesto and warm for a short while.

Serve the minestrone in bowls and sprinkle the cheese over it.
