Endive salad with egg and bacon
A tasty Dutch recipe. The side dish contains the following ingredients: meat, eggs, Zeeland bacon (144 g), endive, extra virgin olive oil, red wine vinegar, coarse Zaanse mustard, sugar and radishes (in slices).

Boil the eggs for about 6 minutes. Let them scare under cold running water, peel them and cut them into pieces lengthwise.

Meanwhile, bake the slices of bacon in approx. 4 min. Until crispy. Drain on kitchen paper. Remove the stalk and the outer leaves of the endive. Wash and dry the leaves and tear them into coarse pieces.

Beat the oil, vinegar, mustard and sugar in a bowl into a dressing. Season with salt and pepper. Add the endive and the radish and mix in the dressing. Divide the eggs and the bacon over them.
