Directions

  1. Dab the fish dry and cut into equal pieces. Drizzle with lemon juice.
  2. Heat 2 tablespoons of oil in a stir-frying pan and cover the fish until it is opaque. Scoop out of the pan and set aside.
  3. Add the rest of the oil to the shortening and fry the red pepper, spring onion without leaves, garlic and ginger.
  4. Spoon the vegetables and potato and stir fry for 3 minutes at a high setting.
  5. Pour in the stock and soy sauce and simmer for 10 minutes. Add the bamboo shoots and heat.
  6. Tie with all-in-all or diluted potato flour and carefully spoon over the fish.
  7. Sprinkle the dish before serving with the spring onion leaves.
