Favorite salad recipe from foodblogger Food Bandits with grilled eggplant, zucchini, figs, lettuce, dried tomatoes, balsamic vinegar and pine nut mix.

Directions

  1. Heat the grilled eggplant and zucchini for 5 minutes in a pan over low heat.
  2. Cut the figs into segments.
  3. Put the oak leaf lettuce melange, heated vegetables and dried tomatoes in a salad bowl.
  4. Mix the sprouts, mediterranean pine nut mix and ¾ of the figs.
  5. Hose the whole well with the balsamic dressing and top the salad with the rest of the figs. Bon appétit! .
