Directions

  1. Preheat the oven to 200 ºC. Mix the fries with the oil and spread over a griddle covered with parchment paper.
  2. Bake in the middle of the oven in about 30 minutes until golden brown and crispy. Change after 10 minutes.
  3. In the meantime, heat the remaining oil in a frying pan and fry the minced meat in 3 minutes. Add the picadillo and tomato cubes and simmer for 5 minutes.
  4. Meanwhile cut the tomato from the fresh package in quarters, remove the seeds and cut the flesh into cubes of ½ x ½ cm (brunoise).
  5. Chop the shallot and finely chop the garlic.
  6. Cut the avocados half way through. Remove the pit. Scoop the flesh from the peel and prick into a coarse puree.
  7. Mix the sliced ​​tomato, shallot and garlic into the avocado puree.
  8. Finish the lime clean, halve and squeeze 1 half. Cut the other half into segments.
  9. Season the guacamole with 1 tbsp lime juice, pepper and salt.
  10. Take the fries out of the oven after 20 minutes. Spoon the fries. Divide the grated cheddar over the fries. Bake for 10 minutes in the oven.
  11. In the meantime, pick the leaves of the coriander.
  12. Cut the stalk of the red pepper from the fresh package. Roll the pepper between your hands so that the seeds fall out. Cut the pepper into rings.
  13. Crumble the white cheese. Take the fries out of the oven.
  14. Divide the minced meat, guacamole, white cheese, pepper rings, coriander and lime wedges over the dish. Serve immediately.
