Beat a dressing of the mustard, oil and vinegar and season with salt and pepper.

Fry the bacon cubes in a dry, hot pan.

Add the garlic and onion and cook for about 4 minutes.

Mix the bacon mixture and the dressing through the lentils.

Divide the lamb's lettuce and parsley over bowls and put the peppers and lentils on them.

Serve with the soft-boiled eggs.
