Let the chickpeas drain. Put together with the tahini, zhug and water in a high cup and puree with the hand blender to hummus.

Halve the lemon and squeeze out one half in a bowl. Cut the rest into segments. Cut the coriander finely and the spring onions in wafer thin rings.

Spoon 2 tbsp lemon juice, the coriander and spring onions into the hummus and season with salt and pepper. Serve with the lemon wedges.
