Preheat the oven to 220 degrees Celsius.

Cook the potatoes briefly so that they are already a bit cooked.

Clean the vegetables and cut everything into big parts.

Drain the potatoes and cut into 4 pieces.

Put everything in an oven dish and mix it. Drizzle with olive oil and season with salt and pepper.

Put in the oven for about 30 minutes until all vegetables are golden brown.

Serve the ratatouille with mustard mayonnaise and baguette.
