Wash and dry the tops of parsley.

Boil the eggs for 4 minutes in boiling water so that they are still soft inside.

Immediately scare them in ice cold water.

Then peel them carefully and dry them on kitchen paper.

Keep the eggs in the refrigerator.

Cut the crusts from the bread.

Make breadcrumbs by roasting the slices lightly, cutting them into pieces and crumbling them in the food processor.

Beat the protein.
-
First roll the cooked eggs thoroughly through the flour, then through the egg white and finally through the bread crumbs.

Press gently.

Fry the eggs at 180 degrees 2 to 3 minutes until they have a nice brown color.

Put them on kitchen paper.

Fry than the parsley tops.
-
Carefully cut off the egg cap so that it turns yellow.

Garnish with the fried parsley.
