Beat the ingredients for the dressing together. Roast the peanuts in a dry, hot frying pan and chop finely.

Place the cucumber and bean sprouts on a dish and pour the dressing over it. Sprinkle with the peanuts, coriander and red pepper. Serve the cucumber salad immediately.
