Directions

Heat the oil and fry the shallots in it. Add the cucumber and fry for 3 minutes.

Pour in the stock and simmer for 10 minutes. Add 1 tablespoon of basil.

Puree the soup and let it cool for at least 2 hours. (This can be done a day in advance).

Stir in the cream and the rest of the basil, salt and pepper through the soup and stir in the chicken and melon.
