Tuscan Tomato soup
Put the tomatoes in boiling water, peel them and cut into pieces.
Heat the olive oil in a soup pot and fry the onion and garlic.
Add the celery, paprika, tomato paste and paprika and cook for about 2 minutes.
Add the tomatoes. Pour in the stock and simmer for about 15 minutes.
Stir in the beans and heat for about 5 minutes without cooking.
Serve the soup and sprinkle with the parsley. Tasty with focaccia bread, olive oil and sea salt.
