Spicy sweet potato burgers

Grate the sweet potatoes. Mix the potato grater with the spring onions, eggs, breadcrumbs, flour, chili powder, salt and pepper.

Form 4 burgers of the potato mixture (add some extra flour if the mixture is too moist). Heat the oil and fry the burgers 4-5 minutes per side.

Cut open the buns and brush them with the chili sauce. Divide the arugula over it, arrange the potato burgers and finish with the cucumber. Tasty with extra chili sauce.
