  1. Preheat the oven to 200 ° C. Line 10 molds with puff pastry. Prick holes in the soil with a fork. Bake the molds for 10 minutes in the middle of the oven.
  2. Heat the oil in a frying pan and fry the leek for 4 minutes. Remove from the pan and allow to cool. Meanwhile, beat the eggs with the crème fraîche. Add the Gorgonzola and the cooled leeks to the egg mixture and season with salt and pepper. Spread over the molds and fry the cupcakes in about 20 minutes until golden brown and done. Serve hot or cold.
