Bring a layer of water to a boil in a pan.

Put the egg yolks with the orange juice and the sugar in a metal bowl and whisk with a whisk.

Hang the bowl in the pan with boiling water and continue to beat.

Remove the bowl from the heat if the sauce is thick but not yet lumpy.

Optionally add the Marnier.

Preheat the oven grill to the hottest setting.

Gently mix the soft fruit in a bowl.

Put the mixed fruit at the bottom of the baking dishes and spread the sabayon over the fruit.

Place under the hot grill until the dish turns color.
