Cook the potatoes with salt until done. Drain them, stamp them and beat an airy puree with the garlic, the olive oil, the cream or milk and the parsley.

Spoon the muslin into 4 ovenproof containers. Sprinkle with a mixture of breadcrumbs or coarsely ground almond and grated cheese. Grate under a hot oven grill.
