Gratin sweet potato mashed with goat's cheese and hazelnuts

Boil the potato cubes in water with salt in about 10 minutes until done. Drain and drain well.

Preheat the oven to 220ºC. Scoop the potato cubes back into the pan and stamp with the milk and butter to a smooth puree. Season with nutmeg and salt and pepper.

Beat the egg through and transfer the puree into the oven dish. Divide the goat cheese and thyme leaves over it and sprinkle with the hazelnuts.

Grate the mash in the middle of the oven in about 20 minutes golden yellow. Tasty with grilled chicken and a fresh salad.
