Gratinated carrot spaghetti with goat's cheese

Chop the onion and cut the tomatoes into pieces. Heat 1 tablespoon of olive oil in a pan and gently fry the onion.

Stir in the tomatoes with oregano and let simmer for 15 minutes until a nice sauce.

Meanwhile, peel the carrots with a peeler and turn them to spaghetti with the spiral cutter. Spoon the carrot spaghetti into a skillet with 1 tablespoon of olive oil and 2-3 tablespoons of water. Heat 3-4 minutes until the spaghetti is al dente.

Preheat the oven grill to the highest setting. Puree the tomato sauce with the hand blender and if necessary, reduce the amount until the thickness is good. Divide the carrot spaghetti into deep plates and spoon the tomato sauce over it.

Crumble the goat's cheese and distribute it over it. Place the plates 15 cm below the hot grill element in the oven and let the goat's cheese light in 3-5 minutes.
