Frittata with sprouts and goat's cheese

Blanch the sprouts and potato slices for about 2 minutes in boiling water with salt and drain into a colander. Let it drain well.

In the meantime, heat 2 tablespoons of oil and fry the onion.

Add the sprouts and potato slices and stir fry for a few minutes.

Beat the eggs with the Italian herbs, salt and pepper in a large bowl and stir in the sprouts, potato slices and goat cheese.

Heat 1 tablespoon of oil in a large frying pan with non-stick coating and spread the sprouting mixture over it. Press well and cook at medium height for about 1 minute.

Then leave the lid on the pan for approx. 5 minutes at a low setting.

Turn the frittata carefully with a flat lid or plate and let it slide into the pan again. Bake the other side for a few more minutes.

Cut the frittata into 4 points and serve immediately.
