Caribbean rice with beans and grilled sausages

Boil the rice with the stock cube. In the meantime, heat the oil in a frying pan and fry the onion, garlic and cajun spices.

Spoon the cooked rice together with the kidney beans in the frying pan with the onion cajun mixture and bake for a further 3 minutes.

Remove the pan from the heat, stir the spring onions, season with salt and pepper and leave to stand with a lid on the pan.

Heat a grill pan on high setting and fry the sausages in about 5 minutes around golden brown and done.

Serve the Caribbean rice with the sausages.
