Directions

  1. Remove the broken mussel shells. Cook the mussels in a large (mussel) pan covered about 7 minutes until all the shells are open. Discard any dense mussels.
  2. Mix the garlic with the butter and parsley and add 1 tablespoon of the cooking water from the mussels. Crumble the white bread, possibly in a food processor, and scoop the bread crumbs with the bacon through the herb butter.
  3. Preheat the oven to 200ºC. Open the mussels and discard the upper shells.
  4. Place the mussels in an oven dish and scoop some of the butter mixture. Grate in the oven for about 10 minutes and serve immediately.
