Preheat the oven to 175 ° C.

Keep separate pistachio nuts (per muffin 1) and finely grind the remaining nuts in the food processor.

Add the spinach and grind everything.

Then add the self-raising flour with the cheese, eggs, milk and olive oil and turn everything into a smooth batter.

Spoon the batter into the cavity molds and press a pistachio nut into each portion.

Put the muffin mold on the baking sheet in the middle of the oven and fry the muffins until golden brown and cooked for 15-20 minutes.

Flip the muffins from the cavities and serve them lukewarm or cold.
