Green vegetables in spicy dressing
- 200 gram broccoli bunch
- 200 gram baking flour
- 0.5 zucchini
- 200 gram green bean
- 1 teaspoon capers for the dressing
- 1 clove garlic for the dressing
For the dressing, grind the capers, garlic, herbs, olive oil and mustard with a hand blender into a green oil. Season with lemon juice, salt and pepper.
Blanch the vegetables in water with salt per type in 2-3 minutes al dente. Scoop the vegetables from the pan and put them on a nice scale.
Pour the dressing over the warm vegetables or add the dressing separately.
